Kaitlin's Bean Salad Recipe
I’ve been inspired by Blue Zones research about the bean. This recipe features everyones favorite vegetable: Broccoli
1 can of kidney beans - drained and rinsed with cold water
2 cups broccoli - blanched for 3 minutes then placed in a ice water bath
1 whole pepper - medium diced
Two raw garlic cloves - grated
Fresh dill - roughly chopped
Olive oil
Salt & pepper
Combine all ingredients and serve cold. Can keep in the fridge for a couple days.

Onions
Black beans, butter beans, chickpeas
